Sweet Earth Foods) Dear readers, Some days we wake up and want to make drastic changes to our lives. Some of us stick it out and some of just give up. It has been 1 year since I have gone pescatarian. Some of you guys may not know what that is, so let me explain. I do not eat meat or chicken. I do eat veggies, seafood, dairy products, etc. I chose to go pescatarian because I just got tired of eating meat. It started to honestly gross me out and I couldn't take it anymore. Plus when you have a disease like Glaucoma you are on many meds that make you feel bloated. I gained 10 lbs last year. I am not proud of that. It wasn't really because of my diet, mainly because of the way my brain is wired with the meds I am on. So I dropped the meat and chicken and haven't gone back since. I have since lost 18lbs. I'm down 3 waist line sizes and I continue to be on my pescaratain diet with 5-6 days of workouts in the week. In fact the pictures you are looking at were taken in May, i'm down 2 more lbs since then. I have a goal and will continue to get to it. I'm loving the way I feel and i'm loving the healthiness of the food I am eating. Listen, I still eat what I want, but I make sure it does not include meat or chicken. Sweet Earth Foods has some of my go-to meals when I am hungry. To wake up every new morning to a vegan based breakfast, I could not ask for more. You can eat meat and chicken with Glaucoma, but I wanted something more clean for my diet. My body is already filled with meds, I needed something new to even it out and give me a little more energy. I love vegetables, growing up I always loved them. I love them more than meat. Like I just get so sad when I see a cow and realize omg, we eat that. It did not take me long to adjust to this diet. I can't believe I have been on this diet for a year now. I actually made it one year without meat. That is insane for me. I thought it would be hard, especially around the holidays, but it got so much easier with time. Some days I get so drained to even do a workout of some sorts. I started upping my runs and circuits as my schedule started getting busier these past few weeks. I need a better body, i'm not saying that because I want to look good just for looks. I am saying that because I need to be strong for me. As I get older my eye will get worst and I want to make sure that if I am gonna go down, I want to go down on my terms. I heavily browsed through old pictures from the first 2 chapters of this 2nd book. I do not like the way I looked. Finally when I look at pictures of me now, it looks more like the me I know. Sometimes changing a diet can help, but as I grow more into myself and who I am, I realize I was always meant to become this version of me. I really hate the idea of eating a poor animal. I'm okay with fish, because I know I need some sort of protein. Would I ever go completely vegetarian and then vegan? I don't know. Everyone I love eats meat. I'm literally the only person who does not eat what they eat. Would I ever go back to eating meat or chicken? Meat, i don't think so. Chicken, if I had to, yes? I don't know how though. But not right now. I tried it back in February and it came right back out. I could not stand the texture or the taste, I was literally grossed out. So no, not right now. I like being pescatarain and i'm proud of myself for sticking with it for one year. I love the results and as much as it pains the people I love, i'm sticking with it. Literally everyone asks me to come back to their team and eat meat. But I just can't. I can't do that. I'm too far in already and I don't want to go back. I have found different ways to eat the food I loved before I was pescatarian and they taste so good. In fact they taste better sometimes. Sweet Earth foods saw that I love eating healthy and that i'm not a meat eater. So I got try some of their "bacon" and let me tell you, you can save your pigs because this tasted so much better than the bacon with actual meat. Also, it is just so fun to eat plates with colorful colors. I guess the more colorful the healthier. I'm on my path somewhere over the rainbow, it is not easy being green, but at least going green 85% of time really can help me out physically and mentally. I look out at the water and walk alongside it, grateful for the beauty that surrounds me. I'm grateful for a new morning that I wake up and help myself in a way that will benefit me in the long run. I know for some people it would not be easy cutting out a major source of protein, but it works for me. It is huge part of my journey now. I'm very proud of myself for how far I have come with this diet. I am honored that brands like Sweet Earth have food that I can eat and enjoy. Dear Dom, I have seen you change since I’ve known you, I’ve seen changes inside out and I’m happy you have been making healthier choices. You definitely look even more handsome my friend. Although I’m not a proclaimed pescatarian, I don’t eat meat either, I’m more vegan-oriented. Love you, Valeria
